Chinese Cassia Cutting Practices
Chinese cassia, often confused with true cinnamon, has been a staple in traditional Chinese cuisine and medicine for centuries. The process begins with selecting appropriate trees — primarily Cinnamomum cassia — which thrive in specific climatic conditions. Farmers hand-pick trees with healthy bark and robust growth.
Harvesting involves cutting the inner bark during peak sap flow in spring, using traditional knives to avoid damaging the tree. Sustainable practices ensure only the innermost bark is harvested, allowing the tree to regenerate. The bark is then dried — either in the sun or under controlled conditions — to retain its flavour and quality. These practices reflect a commitment to sustainability and the preservation of agricultural heritage in China.
