Allicin and Beyond
Dehydrated garlic is rich in nutrients and retains the bioactive compounds that make fresh garlic valuable. The key compound is allicin — formed when garlic is crushed or processed — with well-documented antimicrobial and anti-inflammatory properties.
It is also a meaningful source of fibre, vitamin C, vitamin B6, selenium, and manganese. For food manufacturers making health-oriented products, these properties are commercially useful — provided the allicin content in the supplied product is actually verified, not assumed. We require allicin content to be documented per lot.

What We Check — and Why
Dehydrated garlic quality breaks into four layers. All four must pass. A clean appearance certificate is not quality assurance. Neither is a single lab report from six months ago.
External Quality
Visual, sensory, organoleptic, and physical characteristics — colour, aroma, texture, moisture content, and grade. The sample you approved must match the shipment. It frequently does not.
Internal Quality
Physical and chemical parameters — allicin content, moisture, volatile compounds, and microbiological counts. These require lab analysis per production lot, not per annual spec sheet.
Regulatory Quality
Compliance with your destination market — ETO limits (EU RASFF), pesticide MRLs, heavy metals (lead, cadmium), allergens including peanut protein, and microbiological standards.
Documented Quality — the fourth layer — covers the accuracy and completeness of certificates, lab reports, and supporting paperwork. A certificate that cannot be verified against the actual production batch is not evidence. We check all four layers before confirming any order.
